***Tuna pinwheels:
Tortilla bread
1 can of Tuna (170 gr)
1/4 cup Chopped onions
1/4 cup Chopped celery
1/4 cup Chopped red bell peppers
3 tbsp Green olives
1/2 tsp Granulated garlic
1/2 tsp dried Oregano
1/4 tsp Paprika
Few tsp of Dijon mustard
Tomatoes and lettuce
Salt and black pepper to taste
***Bread squares with cheese and deli meat: ( no measurements needed)
Bread slices
Deli meat
Cheese
Dijon mustard
Lettuce
***Omelette muffins : makes 6
4 eggs
1/4 cup chopped onions
1/4 cup chopped bell pepper
1/4 cup chopped cilantro
1/2 tsp dried oregano
1/2 tsp dried basil
1 tsp granulated garlic
1/2 cup heavy cream
1 tbsp bread crumbs
Salt and black pepper to taste
***Cucumber hummus: ( no measurements needed)
Cucumber slices (1/2 cm thickness )
Hummus
Olives
Paprika
***Feta cheese dip:
150 gr feta cheese
1 large red bell pepper – roasted
4 to 5 cloves of garlic – roasted
Few tbsp olive oil
Veggies and crackers for the dipping
***Phyllo cups with tomato filling :
( for 8 phyllo cups ):
7 sheets of phyllo dough
1 medium tomato – diced
1 red bell pepper – chopped
3 tbsp chopped onion
1 clove of garlic – mashed
A drizzle of Olive oil
1/2 tsp Dried basil
1/2 tsp dried oregano
Salt and black pepper to taste
