Avocado and Cucumber Sandwiches

Avocado and cucumber sandwiches are an easy appetizer to make and also packed with health benefits. Cucumber and avocado are great food choices because they contain a number of beneficial nutrients, making them a healthy addition to any diet.

The two fruits are also good sources of dietary fiber, with avocado having 12 times more fiber per 100 grams than cucumber. They are both high in potassium, and both contain significant amounts of beta-carotene. However, avocado has a greater content of linoleic acid and alpha-linolenic acid than cucumber.

Each provides around 3.6 grams of total carbohydrates per 100 grams.

Cucumber

Cucumber is packed with potassium, which is essential for heart health and helps lower the risk of cardiovascular disease. Another reason to eat cucumber is its anti-inflammatory properties.

It is also an excellent source of fibre and water, which may help prevent constipation and increase regularity. Cucumbers are also great for skincare, as they are rich in flavonoids, which help reduce inflammatory response.

Avocado

Avocado is also rich in monounsaturated fatty acids, which help lower cholesterol levels. These healthy fats also reduce inflammation and prevent blockage of arteries, which is one of the leading causes of heart disease and stroke.

In addition, avocados have a low sodium/high potassium ratio, which helps keep blood pressure stable and prevent heart disease.

The high fibre content, vitamin E, and essential minerals like magnesium found in Avocados helps to regulate hormones. It also helps reduce the production of fatty acids in the body.

So, with all thos benefits in mind, here is our quick and easy recipe for avocado and cucumber sandwiches.

Serves: 1
Cooking time: 45 minutes
Level: Starter

INGREDIENTS
1 large or 2 small ripe avocados
1/2 cup fresh mint leaves
1 jalapeño, deseeded and finely minced
1 cup packed cilantro (just the leaves)
Juice of 1 lime
2 tablespoons honey
Salt to taste
1 loaf white sandwich bread, sliced
Powdered cumin, toasted
1 English cucumber, sliced paper-thin

Instructions To Make Avocado and Cucumber Sandwiches

Combine avocado, mint, cilantro, lime , jalapeño and salt in a food processor to make a smooth spread.

Adjust for salt, then refrigerate until needed.

Spread the avocado ‘butter’ on two slices of bread, then add a layer or two of the cucumber.

Sprinkle with toasted cumin and cover with the second slice of bread.

Cut off the crusts off, then slice into three rectangles.

Serve with afternoon tea.
